Thai Salmon Croquettes

Thai Salmon Croquettes

  1. 2 cups canned salmon, drained
     
  2. 2 cups instant mashed potatoes
     
  3. 2 egg whites
     
  4. 6 scallions, finely chopped
     
  5. 1-2 tablespoons red curry paste
     
  6. 1 tablespoon Thai fish sauce
     
  7. 1 teaspoon lemon juice
     
  8. Peanut or canola oil
     
  9. 2 cups bread crumbs
     
  10. 1 cup flour

Mix all ingredients (minus oil, bread crumbs, and flour) and chill for one hour. Roll 1/3 cup of mixture in bread crumbs and flour. Fry patties in oil at 375 degrees for 3 minutes. Flip and cook for an additional 2 minutes. Recipe yields approximately 12 croquettes.  Alternate: For Granny’s original recipe, leave off the scallions, curry, and fish sauce.
